Healthy recipe: Jamaican Pork with Rice ‘n’ Beans

Jamaican Pork with Rice ‘n’ Beans

The Basics:

What you need:

227g can pineapple rings in natural juice
2 tablespoons of canned pineapple juice
2 tablespoons jerk spices
2 x 150g lean pork loin steaks, visible fat removed
80g dried long grain rice
400 g can black beans, drained
1 tablespoon chopped fresh coriander
Salt and freshly ground black pepper

What to do:

1. Preheat your oven to gas mark 5/190°C or 170°C for fan assisted ovens. Place two pineapple rings at the base of a small ovenproof dish.  Mix together the reserved pineapple juice and the Jerk spices into a paste.  Smear the paste over both sides of the pork steaks and sit them on top of the pineapple rings. Set this aside to marinate for 10 minutes. A good tip is to poke the steaks with a tooth pick before smearing on the marinade as this will help to flavours to really get in there.

2. Once your oven has preheated, bake the pork for 15-20 minutes until just cooked through.

3. While your pork is cooking, bring a large lidded pan of water to the boil and add the rice and cook for 10-12 minutes.  Drain the rice and stir in the beans, cover with a lid and leave for 5 minutes until the beans have been warmed by the steam off the rice.  Stir in the coriander and season.

4. Serve the pork steaks with a pineapple ring over each and the rice with and juices spooned over.
