Want to prepare a cracking feast of tapas at home for the lads? You have to have some chorizo sautéed in red wine.
Don't let anyone tell you that tapas are not a real meal. The sheer wealth of options that are presented to you either in Spain or in a tapas restaurant mean that you have zero excuse to not only find many, many delicious things to eat, you should also be stuffed to the gills afterwards too.
And while you may be more than willing to try tapas when on a weekend city break in Spain, you may be more reluctant to try to recreate that Spanish vibe at home. We're here to tell you there is nothing to be afraid of, and it is easy to prepare a feast fit for a night when the lads pop over to watch the football.
As we all know, Spain has produced no end of beautiful things. Andres Iniesta, Penelope Cruz, the art of Picasso, Dali and Goya and those chewy sweets you only get at Spanish airports to name but a few. But surpassing all of them in our eyes are the georgeous twosome of chorizo and Rioja red wine.
Individually they are magnificent creations; spicy, delicious and very evocative of their homeland. However, put them together and you are in a very special place indeed.
And, just like our previous recipe for Pimientos de Padrón, it is so simple you'll think we are telling porkies.
Get yourself some good chorizo, an onion, some garlic and a bottle of Campo Viejo Rioja. Soften the onion in a pan with some butter, add in some sliced chrizo and sautée for another few minutes. Pour in about a quarter of the bottle of wine, plus a dash of tomato paste and simmer for 10 minutes. That's it. Bang it out on the table in a large bowl and make sure that you have lots of crusty bread to mop up the delicious sauce it creates.
You simply won't be able to knock up a tastier treat in such a short space of time.
