A blend of Glendalough Poitín, TK Red lemonade, Angostura Bitters and fresh lime, the recipe for The Glendalough Red-Eye is a fresh take on the traditional spirit. Created by Ryan Sheridan, a Dublin Mixologist and Bartender from The Exchequer Bar, the The Glendalough Red-Eye has a memorable, creative and tongue-in-cheek Irish character to it. The Red-Eye wouldn’t be complete without the favourite Irish soft drink, TK Red lemonade - one of Ireland’s oldest and best loved mixers and often considered a national treasure. When asked about the drink's name (Red Eye) Donal Ó’Gallachóir, Brand Manager of Glendalough Poitín commented:  "Well firstly, it's red, so you can see what we did there. But secondly term ‘red eye’ is about something that starts late at night and goes through to the early morning. This is the drink for such occasions! “We’re great fans of the classics. Old-school Irish TK, Older-school Glendalough Poitín, ice… sure that’s been in Ireland since at least the ice age and Angostura bitters, invented by a German in Venezuela - how Irish can you get? Oh yeah, and a nice fat wedge of lime!” Launched in July 2013, Glendalough Poitín is crafted from an old poitín recipe using malted barley and the now almost lost, Irish sugar beet. It is fermented for over 72 hours, which gives a higher alcohol percentage and a more robust flavour. It is then carefully batched distilled and matured in Irish oak for up to six months. This allows the spirit to interact with the wood, mellow and gain more flavour. The Glendalough style of production and their attention to flavour detail makes Glendalough Poitín one of the most complex white spirits in the world.
