HSE CEO Paul Reid has confirmed that over 68% of the adult population are now fully vaccinated with 83% having received at least one dose of the Covid-19 vaccine.
However, he added that in spite of the success of Ireland's vaccine rollout, hopsitalisations are rising with 123 people currently in hospital with the virus.
Taking to Twitter on Sunday he said: "Hospital Covid-19 numbers are rising at 123, 21 in ICU.
"Positively, now over 5.5M vaccines administered with 83% of adults now partially vaccinated and over 68% fully.
"As hospitality, society and the economy opens up further, let's all embrace it safely and make it work."
Reid said earlier this week that in spite of the vaccine ramp up, the more transmissible Delta variant of Covid-19 poses a "huge risk" to Ireland's vaccine progress.
"Delta poses a huge risk to this progress but one that we can meet head-on," he said.
"Let's aim to support our healthcare workers having a manageable August. One that they all deserve."
Everyone over the age of 18 in Ireland can now register for an mRNA vaccine.
Ireland is currently the fastest country in the Organisation for Economic Co-operation and Development (OECD) for Covid-19 vaccinations.
The country also ranks 12th in the 38 OECD member countries in terms of vaccines administered.
The figures, which compare the seven-day rolling average of the 38 countries in the OECD, show that Ireland, in the seven days up to 18 July, had been vaccinating 1.24% of the population per day.
