Pure and Simple Recipe of the Day: Fresh Tomato Soup

Ingredients

  • Two cups fat-free, saltless chicken broth
  • One chopped onion
  • 3/4 chopped celery
  • One tablespoon tomato paste
  • One tablespoon thinly sliced fresh basil
  • 1/2 teaspoon of salt and a 1/4 teaspoon of black pepper
  • Six tablespoons of plain low-fat yoghurt
  • Two pounds of plum tomoatoes. Cut them into wedges

Instructions

  • Put the onion, celery, tomato paste, basil salt and pepper into a saucepan of the chicken broth and bring it to boil.
  • Reduce the heat and let it simmer for about half an hour.
  • Place the contents of the saucepan into a blender. Remove the lid of the blender which will allow the steam to escape. Just put a towel across where the lid was to avoid splattering.
  • Blend untill smooth and pour contents into big bowl.
  • Stir in the salt and pepper and ladel a serving into each of the six bowls accompanied by one tablespoon of plain low-fat yoghurt and a tablespoon of thinly sliced fresh basil.
