Nutritious and delicious.
Ingredients
- Two cups fat-free, saltless chicken broth
- One chopped onion
- 3/4 chopped celery
- One tablespoon tomato paste
- One tablespoon thinly sliced fresh basil
- 1/2 teaspoon of salt and a 1/4 teaspoon of black pepper
- Six tablespoons of plain low-fat yoghurt
- Two pounds of plum tomoatoes. Cut them into wedges
Instructions
- Put the onion, celery, tomato paste, basil salt and pepper into a saucepan of the chicken broth and bring it to boil.
- Reduce the heat and let it simmer for about half an hour.
- Place the contents of the saucepan into a blender. Remove the lid of the blender which will allow the steam to escape. Just put a towel across where the lid was to avoid splattering.
- Blend untill smooth and pour contents into big bowl.
- Stir in the salt and pepper and ladel a serving into each of the six bowls accompanied by one tablespoon of plain low-fat yoghurt and a tablespoon of thinly sliced fresh basil.
