Ingredients
- Ham – the amount depends of how many are eating, use one or two pieces per cup.
- The number of eggs depends on the number of cups
- A scallion
- Red cheddar or feta cheese
Instructions
- Preheat the oven to 200 degrees Celsius / Gas Mark 6.
- Line each of the slots in the cupcake try with one or two pieces of ham
- Crack one egg into the ham-lined slots in the tray
- Bake for 10-12 minutes for a firm yolk. If you prefer soft yolks, cook 8-9 minutes.
- Sprinkle finely chopping scallion and cheese for extra flavour
