Pure and simple recipe of the day: Egg and bacon breakfast cups

Try something different tomorrow morning.

Ingredients
  • Ham –  the amount depends of how many are eating, use one or two pieces per cup.
  • The number of eggs depends on the number of cups
  • A scallion
  • Red cheddar or feta cheese
Instructions
    1. Preheat the oven to 200 degrees Celsius / Gas Mark 6.
    2. Line each of the slots in the cupcake try with one or two pieces of ham
    3. Crack one egg into the ham-lined slots in the tray
    4. Bake for 10-12 minutes for a firm yolk. If you prefer soft yolks, cook 8-9 minutes.
    5. Sprinkle finely chopping scallion and cheese for extra flavour
