Pure and Simple Recipe of the Day: Omelette Wraps

Lunchtime special.

Ingredients

  • Two pieces of wholemeal tortilla
  • Two eggs
  • Oil spray
  • 1/2 cup of grated cheddar cheese
  • Some chopped red onion
  • 1/2 cup of alfalfa sprouts

Instructions

  • Lightly whisk the eggs in a jug
  • Spray a small frying pan lightly with oil spray and place over high heat
  • Pour half the egg into the hot pan and cook for 1 minute, then turn over and sprinkle with grated cheddar
  • Cook for 30 seconds or until set. Place on one of the tortillas
  • Repeat for the other tortilla. Top the omelettes with alfalfa sprouts and onion
  • Roll up to enclose the filling and enjoy
