Pure and Simple Recipe of the Day: Omelette Wraps
Lunchtime special.
Ingredients
- Two pieces of wholemeal tortilla
- Two eggs
- Oil spray
- 1/2 cup of grated cheddar cheese
- Some chopped red onion
- 1/2 cup of alfalfa sprouts
Instructions
- Lightly whisk the eggs in a jug
- Spray a small frying pan lightly with oil spray and place over high heat
- Pour half the egg into the hot pan and cook for 1 minute, then turn over and sprinkle with grated cheddar
- Cook for 30 seconds or until set. Place on one of the tortillas
- Repeat for the other tortilla. Top the omelettes with alfalfa sprouts and onion
- Roll up to enclose the filling and enjoy
