"Over a period of time we realised we're very different and that works very, very well. It's like one of those chorizo sausages with a poached egg. Who knew that would go together? "Or poached egg and avocado on toast - who knew that would be a good idea? The shallot on its own is awful, but when you put it with an oyster and some Tabasco sauce, it's delicious.
