Another week, another fantastic healthy recipe from Weight Watchers that doesn’t skimp on taste. This gammon and colcannon dish – cranberry-glazed gammon, no less – should tick all the boxes for any dinner time.
Cranberry-glazed gammon with colcannon
The basics:

Takes 15 minutes to prepare, 1¾ hours to cook
Serves 6
What you need:
750g (1lb 10oz) smoked gammon joint, rinsed
1 litre (1¾ pints) no added sugar cranberry juice
1 onion, quartered
12 whole cloves
75g (2¾ oz) cranberry sauce
¼ teaspoon ground ginger
For the colcannon:
1.25kg (2lb 12oz) potatoes, peeled and cut into chunks
Low fat cooking spray
2 leeks, sliced
½ Savoy cabbage, shredded
100ml (3½fl oz) skimmed milk
Freshly grated nutmeg
Freshly ground pepper
Serve with carrots and runner beans, for no extra ProPoints values.
What to do:
1. Place the gammon in a deep, lidded saucepan that will hold it snugly and pour in the cranberry juice. Add extra water to cover the gammon if necessary. Add the onion and cloves, cover the pan and bring to the boil. Simmer, partially covered, for 1 hour.
2. Preheat the oven to Gas Mark 6/200ºC/fan oven 180ºC. Drain the gammon and remove any casing or binding. Trim off any skin and fat then sit the joint in a foil-lined roasting tin. Mix the cranberry sauce and ginger together and spoon over the gammon. Roast in the oven for 20 minutes and then rest for 10 minutes, loosely covered with foil.
3. While the gammon is roasting, bring a pan of water to the boil and cook the potatoes until tender.
4. Spray a separate, lidded, non stick saucepan with the cooking spray and cook the leeks for 1 minute. Add 2 tablespoons of water and cook, covered, for 2 minutes. Stir in the cabbage and 6 tablespoons of water. Replace the lid and cook for 5 minutes, stirring once or twice. Drain off any excess liquid.
5. Drain the potatoes in a colander. Heat the milk in the same saucepan used for the potatoes the return the potatoes to the pan and mash with the milk. Season and add nutmeg. Stir in the leeks and cabbage.
6. Slice the gammon thinly and serve one-sixth of the joint per person with the colcannon.
7. Sit down to a slap up dinner that isn’t going to stretch the waist-line.
