Here’s a dinner recipe that’s both seriously tasty and easy to make. Why is it so easy? Well, they don’t call it Italian One-Pan Lamb for nothing.
Italian One-Pan Lamb
The basics:

Takes 5 minutes to prepare and only 20 minutes to cook
Serves 4
What you need:
4 x 100g lamb leg steaks
1 red onion, diced
1 red pepper, deseeded and diced
1 aubergine, diced
2 cloves of garlic
3 tbsp balsamic vinegar
2 tbsp tomato purée
400g tin chopped tomatoes
240g dried fusilli pasta
6 tbsp chopped fresh basil or parsley
What to do:
1. Warm up a large non-stick frying pan over a high heat. Make sure it’s good and hot before doing anything else and be carful not to burn yourself.
2. Season your lamb with salt and pepper and add it to the hot pan. You can pierce your lamb with a tooth pick before seasoning to ensure that the flavours gets right in there. Fry your lamb without using any type of oil for 3-4 minutes on each side. Once it’s nicely browned you can then set the lamb aside for the time being.
3. Now you can add the onion, pepper, aubergine, garlic and balsamic vinegar into the hot pan. Cook for five minutes, or until the veg has softened and begins to brown slightly. Make sure to stir the veg every now and again so that you don’t burn it.
4. Add your purée, tomatoes and 1 litre of boiling water to the pan of veg. Bring to the boil and then add the pasta.
5. Let your mixture simmer for seven minutes stirring only once. Return the lamb and any juices back to the pan and simmer gently for a further five minutes.
6. Stir in your basil to taste and there you have it. A full tasty meal cooked in just one pan for all the family. All that’s left to do now is… enjoy (and clean up one pan).
