Delicious and nutritious.
Ingredients (to serve four):
- Six eggs
- Two tablespoons of olive oil
- One medium bunch of kale, don’t use the stalks
- One cup of grated mozarella cheese
- Wholemeal brown bread
Instructions:
- Whisk the eggs in a bowl and leave aside
- Heat up a large pan and add some olive oil and kale. Cook kale, turning it over and pressing down with a spatula, for about 5 minutes, until it’s soft and juicy.
- Add the whisked eggs to the pan and let them scramble for 2-3 minutes.
- Add the kale and cheese to the mix and take off the heat. Quickly stir the mixture and cover with a lid.
- Let it stay for a minute and serve it with some toast.
- Eat it. All of it. Now.
