Pure and Simple Recipe of the Day: Scrambled egg and kale

Delicious and nutritious.

Ingredients (to serve four):

  • Six eggs
  • Two tablespoons of olive oil
  • One medium bunch of kale, don’t use the stalks
  • One cup of grated mozarella cheese
  • Wholemeal brown bread

Instructions:

  • Whisk the eggs in a bowl and leave aside
  • Heat up a large pan and add some olive oil and kale. Cook kale, turning it over and pressing down with a spatula, for about 5 minutes, until it’s soft and juicy.
  • Add the whisked eggs to the pan and let them scramble for 2-3 minutes.
  • Add the kale and cheese to the mix and take off the heat. Quickly stir the mixture and cover with a lid.
  • Let it stay for a minute and serve it with some toast.
  • Eat it. All of it. Now.
