Pure and Simple Recipe of the Day: Grilled chicken with penne pasta
Tasty and healthy.
Ingredients
- 1/2 onion, finely chopped
- 4 minced garlic cloves
- 1 can of diced tomatoes, about 14 ounces
- 14 ounces of tomato sauce
- 1 can of tomato juice, 6 ounces
- 2 tablespoons of fresh chopped basil
- 1 tablespoon of olive oil
- 1 teaspoon of salt
- 2 chicken breasts, grilled and sliced
- 2 cups of penne pasta
- Grated Parmesan cheese
Instructions
- Sauté onions in olive oil until translucent
- Add garlic and cook for one more minute
- Add tomato, tomato sauce, tomato juice, black pepper, salt, basil, and parsley
- Once sauce boils reduce to simmer and add grilled chicken
- Simmer until pasta is cooked
- Cook penne pasta in boiling, salted water
- Strain the pasta and add to the sauce
- top it off with a sprinkling of Paremsan cheese
Serves 4-6
