Pure and Simple Recipe of the Day: Grilled chicken with penne pasta

Ingredients

  • 1/2 onion, finely chopped
  • 4 minced garlic cloves
  • 1 can of diced tomatoes, about 14 ounces
  • 14 ounces of tomato sauce
  • 1 can of tomato juice, 6 ounces
  • 2 tablespoons of fresh chopped basil
  • 1 tablespoon of olive oil
  • 1 teaspoon of salt
  • 2 chicken breasts, grilled and sliced
  • 2 cups of penne pasta
  • Grated Parmesan cheese

Instructions

  • Sauté onions in olive oil until translucent
  • Add garlic and cook for one more minute
  • Add tomato, tomato sauce, tomato juice, black pepper, salt, basil, and parsley
  • Once sauce boils reduce to simmer and add grilled chicken
  • Simmer until pasta is cooked
  • Cook penne pasta in boiling, salted water
  • Strain the pasta and add to the sauce
  • top it off with a sprinkling of Paremsan cheese

Serves 4-6
