Recipe of the Week: Sausage and Egg Muffin

It is often said that breakfast is the most important meal of the day. With that in mind, Weight Watchers have shown us how to make a great indulgent treat for the weekend.

It is often said that breakfast is the most important meal of the day. With that in mind, Weight Watchers have shown us how to make a great indulgent treat for the weekend.

Sausage & Egg Muffin

Servings:  4

Preparation Time:  5 min

Cooking Time:  10 min

Ingredients

8 Low fat sausages

Calorie controlled cooking spray

4 eggs

2 white muffins

8 tsp tomato ketchup

chopped fresh parsley, to serve

Instructions

  1. Preheat the grill. Split the sausages and slip the skins off the sausages. Shape the sausagemeat into 4 patties.
  2. Mist a sheet of foil with cooking spray and place the patties on top. Grill the patties, turning once, for 10 mins or until cooked through.
  3. Meanwhile, crack each egg into a ramekin and then slide from the ramekin into a pan filled with just simmering water. Poach for 6 minutes or until just set.
  4. Halve the muffins and toast for 2 mins. Top each muffin half with 2 tsp ketchup, a sausage patty and a poached egg. Garnish with parsley and serve between 4 plates.
