How to make a healthy Spice Bag at home in 5 super easy steps

Every New Year’s resolution starts off with the best intentions but as the weekend draws closer, the temptation to pack it in and order yourself a takeaway is pretty hard to resist.

But instead of breaking your healthy eating pact, there are some ways to enjoy your go-to fast food at home, by giving the recipes a slightly healthier twist. Plus, now that we’re well into the Chinese New Year, it’s the perfect occasion to get creative in the kitchen and cook up a delicious Asian-fusion dish.

Bord Bia has teamed up with TV chef Kwanghi Chan for their new Life is Better with Fruit & Vegetables campaign, to create this healthy spice bag recipe that will rival your favourite Chinese restaurant’s take on the dish. Instead of ordering in, you can prep a simple and healthy vegetable and chicken spice bag at home, to enjoy some tasty flavours while still adding to your portion count for the day ahead.

The Life is Better with Fruit & Vegetables campaign aims to spread the good word about vegetables that are fresh, locally grown and in-season. The campaign aims to educate people about the simplicity of preparation, versatility and health benefits of fruit and vegetables, while avoiding food waste.

It aims to promote the many delicious fruit and vegetable recipes that give a new lease of life to our everyday meals, showing how easy it is to add extra taste, flavour and health to the food you’re cooking at home on a regular basis. You can visit fruitnveg.ie to find your favourite recipe.

With that in mind, Kwanghi has come up with a vegetable-focused take on the classic spice bag that can be prepped in minutes. If you’re pressed for time, this recipe is a real winner.

You can follow along with the quick and simple recipe below but first, here are the ingredients you’ll need…

Ingredients:

  • 1 chicken fillet, cut into strips
  • 1 egg white, whisked
  • 1 tbsp flour or potato starch for coating
  • 1/4 cauliflower florets
  • 1 handful mushrooms, sliced
  • 1 handful baton carrots
  • 1 clove garlic, chopped
  • 1 red onion, sliced
  • 1 Pak Choi, cut into 4 quarters lengthways
  • 100g Rooster potatoes, for skin-on chips or wedges
  • 1/2 tsp Chinese five-spice powder
  • Salt and black pepper for seasoning

Now that you’ve got all your ingredients in order, you’re just 5 simple steps away from enjoying a tasty vegetable and chicken spice bag fakeaway…

Kwanghi Chan’s Veg and Chicken Spice Bag

Step 1: Mix your flour and a sprinkle of the spices into a bowl. Cut your chicken fillet into 2cm strips. Coat your chicken strips in the whisked egg white and then roll them in the flour and spice mixture until it’s fully coated.

Step 2: Cook your coated chicken strips in an air fryer or in the oven (or even a deep fat fryer) as you wish for just over 15 minutes until it’s nice and golden and cooked inside.

Step 3: While the chicken is cooking, fry the cauliflower, mushrooms, carrots and peppers with the garlic in a wok or frying pan, with the remaining spices.

Step 4: When the vegetables have softened but still have a little bite to them, add the red onions and Pak Choi until soft but still have a bite to them.

Step 5: Cook your potato chips or wedges how you prefer and once everything is cooked, throw it all together into the wok or bowl and toss, add some more spice if needed, and you’re good to go.
